Blackstrap Molasses Liqueur
2. 5 cups Cold Brewed Coffee
1 cup Water
1.5 tablespoons Blackstrap Molasses (Start with 1 tbsp and slowly build up from there)
2 teaspoon Cinnamon
2 teaspoon Nutmeg
1.5 tablespoons Vanilla Extract (not imitation vanilla)
1.25 cups Rum
Pour 1 cup Water into a pot and bring to medium heat, but not simmering or boiling. Add 1 tablespoon of Blackstrap Molasses and stir until the molasses has dissolved into the liquid. Taste. Be careful not to burn the molasses with too much heat. If the molasses flavor is not too strong, add 1/2 tablespoon (or a full tablespoon) of Blackstrap Molasses to taste; we suggest slowly adding the molasses because it is a strong flavor that can be overwhelming if you’re not familiar with the taste. For our Blackstrap Molasses Liqueur, we used a little less than 2 tablespoons of molasses for a strong elixir with an intense molasses flavor. After you’ve stirred in the molasses, add the Cinnamon and Nutmeg. Remove the pot from heat and let it cool.
Once the liquid is cooled to room temperature, add 2 cups Cold Brew Coffee, 1.5 cups Rum, and 1.5 tablespoons of Vanilla Extract. If you’re not familiar with Cold Brew Coffee, follow the link to see our post on how to make your own coffee extract at home. As a side note, we heat the molasses brew before adding it to the coffee extract so that we do not burn the coffee during the cooking process. It’s important that the liquid has completely cooled before you add the cold brew coffee extract, rum, and vanilla.
Stir the dark liqueur. Bottle. Enjoy!
